This year, Zelie Beans is ecstatic to be able to carry four coffees from our friends at Mapache Coffee, three of which are beautiful examples of careful selection and processing. The flagship “Mapache Estate” washed process coffee is one that combines beans from all of Mapache’s farms to create a blend that showcases the flavors of Mapache’s coffees, and their hard work and commitment to quality of coffee and life for all those involved in their operations.

This year we are especially excited to be able to offer three specialty processed coffees, all contrasting each other as a trio of what processing and variety can do to a coffees flavor qualities. Of the three coffees, two are using a single variety, Pacamara, and the other is using solely bourbon, two coffee varieties that are highly prized for their quality in the industry. To make them even more interested, one lot of the Pacamara was processed using the oldest form of coffee processing, natural processing. This means the beans were picked at peak ripeness, then dried in the sun, allowing the skin and mucilage to dry onto the coffee seed (bean) and soak in a harmony of fruity, bright flavors. The other Pacarmara contrasts this natural using what is called the “honey” process where the skin of the coffee fruit is removed, and the mucilage is left on the seed (bean) to dry, creating a unique flavor that straddles the lines between a naturally processed coffee and a washed process coffee (which would be the Mapache Estate Blend). The final coffee is a contrast to the Pacamara Natural process, because it too is a naturally processed coffee, except it is made using a different coffee variety, Bourbon. The contrast between these two naturally processed coffees gives a rare view into the influence that a coffee variety can have on flavor, just as various wine grape or apple varieties have notably different flavors. Overall, we could not be more excited to offer all three of the processing methods commonly used in coffee growing regions, washed, honey, and natural. We are even more thankful to have them come from the Mapache team lead by Sofia and Jan-Carlo Handke who really do align with our motto of families helping families through specialty coffee.

Pacamara Honey
Coming from the producers Mapche Coffee, this coffee is made up of one variety, Pacamara, well-known in the industry for its large bean size and delicious cup quality. This coffee comes from the highest point in Finca El Naranjito and was made sure to be flawlessly hand-picked, cherries are selected at the ripest point and are later processed in Mapache's own mill where attention to detail is a priority. The result is a complex yet delicate cup with notes hinting of honeycomb, vanilla, and melon.

Pacamara Natural
Mapache's Pacamara Natural is characterized by its thoughtfulness through the entire harvesting and milling process. The area where this Pacamara cultivar is located is privileged, totally protected from the strong winds and direct sunlight, allowing for ripe conditions for high-quality coffees. The coffees are picked by Mapache’s team of coffee pickers, who delicately select the ripest cherries to ensure longevity and continued protection of the plants. At the processing station, the coffee is floated then spread over moveable drying beds where is dried for 25 days This lot of naturally processed Pacamara produces a coffee with a particular grapefruit note, lingering aftertaste, and some hints of caramel and mango.


Bourbon Natural
Mapache's Bourbon variety is grown at Finca El Naranjito, 1400 meters above sea level overlooking the Pacific Ocean. The Bourbon trees have been kept very healthy for almost 5 decades, much longer than the newer planted Pacamara varieties. The proximity of El Naranjito to El Imposible National Park creates a one of a kind environment for growing coffee, during the rainy season the trees barely get touched by sunlight. Fog surrounds the farm from early morning and so the beans grow slowly under very humid conditions. This is undoubtedly favorable for coffee plants. With notes of passion fruit, plum, and pink grapefruit this makes for one special coffee.
